The journey began when founder Jay Desai received a diabetes diagnosis and found most “healthy” desserts to be pale imitations of the real thing. To reclaim the joy of ice cream without compromising his health, he partnered with microbiologist Reza Sadat to bridge the gap between science and soul. Together, they spent years perfecting a formula that balances nutritional standards with culinary excellence.
